Butter, Parmesan, Garlic Zucchini Noodles served with Honey, Lime, Mint Watermelon

This meal was a hit. Zucchnin noodles (zoodles) made with a vegetable spiralizer, then lightly baked and tossed with butter, garlic, and parmesan cheese. I served them with a side of honey, lime, mint watermelon.



Recipe: Butter Parmesan Garlic Zucchini Noodles
5 medium sized zucchinis, spiralized into noodle shape
Sea salt
3 cloves raw garlic, minced
2 Tbsp. butter
Parmesan cheese
Preheat oven to 375 degrees. Spiralize your zucchinis then blot some of the water away using paper towels. Sprinkle sea salt to taste over the zucchini noodles. Place noodles on parchment paper-lined baking sheet and bake in over for ~10 minutes. Remove and set aside briefly. Using a saute pan, melt butter over medium high heat then add garlic. Cook for 1-2 minutes then add zucchini noodles to pan, tossing all together for another 1-2 minutes until coated. Serve with parmesan cheese sprinkled over the top.
Recipe: Honey, Lime, Mint Watermelon
1/4 cup honey
1 lime
1 Tbsp minced mint
1/2 of a small watermelon
Place honey in a small sauce pan over medium low heat for ~2 minutes, until runny but not boiling. Add the juice of 1 lime, remove from heat and whisk together until well combined. Let sit to cool for a few minutes (2-5 minutes.) Chop the watermelon into 1"x1" cubes and then pour honey-lime mix over melon. Sprinkle minced mint over the top of the melon and serve.
