Homemade Sparkling Nectarine Jello

This is a simple, delicious snack that I love. I used some nectarines that were almost over-ripe and needed to be eaten/used. Added a bit of sparkling limeade for more sweetness and a "sparkling" effect. I served these at my daughter's 3rd birthday party as a treat with homemade whipped cream on top.
I use this gelatin because I like it and it's good quality:
Pureed up some nectarines in my blender.
Added a bit of sparkling limeade then gelatin. Heated it up on the stove top.
Poured into a glass dish and put in the refrigerator for a few hours to set.
Recipe: Sparkling Nectarine Jello
3 ripe nectarines (should be about 1 cup- add more fruit as needed to equal 1 cup)
Grease baking dish with coconut oil (this will help with removal of jello after it sets). Cut up your nectarines and puree with skin on in blender until smooth. Pour in sauce pan and then add sparkling juice. Stir to combine. Add gelatin and stir a few times. Turn heat on medium low, stiring gently with a spoon until gelatin dissolves. Remove from heat, pour into your glass dish, and put in refrigerator for a few hours until solid.
*You can use any type of sparkling juice, or just sparkling water if your ok with less sweetness
